What Is Beryan?

Beryan is one of the unique dishes of the Isfahan province which has not only became famous among Iranians, but also all over the world. Every year tourists from all around the world come to Isfahan to taste it and enjoy a walk alongside the Zayandehrood River afterwards. Just like the city itself, the foods are also traditional and each roots back in the past, some say that it goes back to 400 years ago but of course it was prepared with some slight changes.

How to Prepare Beryan

This tasty traditional cuisine consists of minced mutton, offal and lamb’s white liver. The ingredients are flavored with special spices, not to forget saffron, and cooked over coals. The word Beryan means fried, which refers to the special frying way used for preparing it. After the main ingredients are mixed with spices, a patty shaped piece of meat is put on a wide spatula and is fried. What is remarkable in traditional Iranian meals is the way they are designed which increases your appetite. Beryan is also designed with walnuts, pistachios, almonds, and basil and then sprinkled with cinnamon and sour orange (giving it a nice smell and taste). Finally, it is served wrapped in flat traditional bread. In addition, you can eat the mouth-watering Beryan without any forks or knives, instead you use your own hands, a healthy traditional way of eating that has been inherited from the past.

This 400-year-old savory dish, which has also been known as the most famous traditional food of Isfahan, has its own appetizer, Beryan broth, and is called Abgooshte-Beryan. Abgoosht consists of traditional bread, fried mint, kashk, and Beryan broth.
